Finally got my first dose of Pho! Woot Woot! Mr Nam, our tour guide at @khiritravel took us to his favourite Pho joint, the name currently evades me but the Pho shops are dime a dozen and what we discovered in Saigon is that it really comes down to personal taste, so it's best to explore a few. For instance, this Pho was, how to say? Deeply "beefy" in colour and flavour, mostly savoury, with a prominent taste of iron and loads of fat that floated on the surface which left a film of greasiness on the lips. This was counteracted by the enormous pile of bean sprouts and leafy greens to tear on top to provide crunch and freshness. Not forgetting the ubiquitous chili and bean paste sauce, fresh chili and lime to and adapt the taste to your liking.
